Bolinhas (Cookies) - Goan











Bolinhas, are Goan cookies made with semolina and coconut. They are slightly crisp on the outside and soft inside. It is a tea time treat that can be enjoyed during any time of the year but without bolinhas as Christmas sweets your Christmas sweets platter would be incomplete.


LETS GET COOKING:

Bolinhas (Cookies)

Course : Snack


Cuisine : Indian




Prep time : 10 minutes




Process time : 30 minutes




Total time : 40 minutes


Ingredients:

  • Semolina - 1 cup

  • Grated coconut - 1/2 cup

  • Coconut sugar or Sugar - 1/4 cup

  • Cardamom powder - 1 tsp

  • Eggs -2

  • Butter - 2 tsp

Instructions:

  1. In a pan, dry roast semolina until it leaves aroma, transfer to the bowl and cool down completely

  2. Separate egg yokes and white, beat the egg white until it becomes frothy

  3. In a bowl add butter, coconut sugar and mix well

  4. Add grated coconut, cardamom powder and mix again

  5. Now add egg yokes and mix it, then add eggs white and mix gently. Cookie batter ready

  6. Refrigerate for 1 hour

  7. Apply oil on hands, take small portion of cookie batter , roll them

  8. Make cross on each cookie ball

  9. Place them on parchment sheet

  10. Bake them in pre-heated oven for 30 minutes at 200 degree

  11. Cool down completely

  12. Store in ear tight jar
