Bolinhas, are Goan cookies made with semolina and coconut. They are slightly crisp on the outside and soft inside. It is a tea time treat that can be enjoyed during any time of the year but without bolinhas as Christmas sweets your Christmas sweets platter would be incomplete.

Semolina - 1 cup
Grated coconut - 1/2 cup
Coconut sugar or Sugar - 1/4 cup
Cardamom powder - 1 tsp
Butter - 2 tsp
In a pan, dry roast semolina until it leaves aroma, transfer to the bowl and cool down completely
Separate egg yokes and white, beat the egg white until it becomes frothy
In a bowl add butter, coconut sugar and mix well
Add grated coconut, cardamom powder and mix again
Now add egg yokes and mix it, then add eggs white and mix gently. Cookie batter ready
Refrigerate for 1 hour
Apply oil on hands, take small portion of cookie batter , roll them
Make cross on each cookie ball
Place them on parchment sheet
Bake them in pre-heated oven for 30 minutes at 200 degree
Cool down completely
Store in ear tight jar
