Gutti Vankaya Kora

Gutti Vankaya Kora or stuffed Brinjal curry is an authentic Andhra side dish from South India. This Gutti Vankaya curry is usually prepared with a peanut masala powder which makes the dish unique and flavorsome. The dry roasted peanut powder, sesame seeds, coconut and spices give a uniquely rich and creamy texture to this curry. Usually, small purple brinjal will be used to prepare this dish.

Ingredients:

  • Brinjal(small) - 4

  • Ground nut - 1/4 cup

  • Sesame seeds - 2 tsp

  • Coriander seeds - 1 tsp

  • Cumin seeds - 1 tsp

  • Coconut - 1/4 cup

  • Onion- 1

  • Tomato - 1

  • Ginger - 1/2 inch

  • Garlic - 6

  • Cinnamon - 1/2 inch

  • Cloves - 2

  • Cardamom - 2

  • Turmeric powder - 1/2 tsp

  • Chili powder - 1 tsp

  • Tamarind juice - 1/4 cup

  • Salt - as per taste

  • Groundnut oil - 2 tsp

Instructions:

  1. In a pan, dry roast groundnuts, sesame seeds, coriander seeds, cumin seeds and coconut, transfer into plate and allow it to come to room temperature

  2. Add the roasted seeds into mixer and grind corse

  3. Now add onion,tomato and ginger garlic to it

  4. Now add turmeric powder, chili powder and salt as per taste

  5. Grind it well

  6. Cut the brinjal into 'X' shape

  7. Stuf the grounded masala into brinjal

  8. In a pan add groundnut oil, then add cinnamom, cloves and cardamom, then shallow fry the stuffed brinjal until it turns soft

  9. Now add the remaining masala into it and mix well

  10. Add tamarind juice and water and cook until oil separate on top

  11. Serve it hot chapati or dosa
