Kashmiri Noon Tea | Pink Chai
Often called Pink Tea, Kashmiri chai is a milk tea characterized by its dusty pink color and garnishing of crushed nuts. It's brewed with green tea leaves and baking soda, and then mixed with milk to give it a distinct pink color. Tea will be salty.
Kashmiri Chai originates from the valley of Kashmir which has this exclusive variety of tea leaves. Also known as noon (salt) chai or gulabi (pink) chai, this tea unlike the others is very fragrant and creamy. Traditionally it was prepared with salt only but over the years people have started adding sugar giving it a richer taste.
Why is Kashmiri tea pink? Kashmiri Chai is a traditional drink with delicious flavor and unique pink color. The pink color doesn't come from an artificial (or natural) coloring, it's a result of chlorophyl in tea reacting with bicarbonate of soda that's added to boiling tea leaves.
Why is baking soda used in tea?
Baking soda neutralizes the tannins in black tea, giving it a smoother taste. This same trick works to take the bitterness out of green tea as well; you can add a teeny pinch to a mug of hot tea as it's steeping.
Health benefits of Noon chai
It is known to prevent heartburn and bloating because of the cardamom and baking soda content. It is also known to reduce stress and anxiety.
Adding cold water will make make the tea more pink.

Kashmiri Noon Tea | Pink Chai

Course : Beverage
Cuisine : Indian
Prep time :5 minutes
Process time : 10 minutes
Total time : 15 minutes
Ingredients:
Green Tea leaves - 2 tsp
Baking soda - 1 tsp
Salt - 1 tsp
Milk - 1 cup
Water - 1/2 cup
Cold water - 1/2 cup
Cardamom crushed - 4
Almonds chopped - garnish
Instructions:
In a sauce pan add, water with of green tea and bring to boil. Add crushed cardamom seeds.
Once the tea starts to brew, add baking soda and mix well.
Then add salt and allow the tea to boil until the tea water is reduced to half.
Then add cold water to to the reduced tea, again boil will until it reduced half.
Finally add milk to it and mix well. Adjust the milk according to the brightness of pink color shade.
Strain the tea and garnish with chopped almonds.
