Bai Bai from Indian State Mizoram

Mizo Bai, a vegetable stew from Mizoram’s cuisine that is made with seasonal greens and vegetables boiled with a little salt. The dish is flavored with North Eastern local ingredients like lengmaser and fermented soya bean paste and the spicy bird’s eye chili.

Ingredients: 

  •  Rice - 1 cup

  • Ginger - 1/2 inch

  • Red chili - 2

  • Mustard leaf - 1 bunch

  • Salt - as per taste

Instructions:

  1. wash and soak any type of rice for 1 hour

  2. In a stock pot, add water, allow them to boil, then add soaked rice with soaked water to it and mix well

  3. Now add ginger and red chili to it

  4. Add salt as per taste and mix well

  5. Then add mustard leaves to it and mix

  6. Cook until rice and mustard leaves are cooked mushy

  7. Serve hot
