Tudkiya Bhath flavourful rice pulao from Indian state - Himachal Pradesh

The beautiful state of Himachal Pradesh offers a wide range of lip-smacking and savoury food items. The cuisine of Himachal Pradesh has a significant influence on the Punjabi and Tibetan style of food. The people of Himachal Pradesh prefer very spicy food items.


Tudkiya Bhat is a delicious flavourful rice pulao, cooked using spices.


Potatoes are used a lot in Himachal Pradesh Cuisine so it is no wonder that potatoes are used to make this rice.

Ingredients:

  • Basmati Rice - 1 cup

  • Potato - 2

  • Carrot - 1

  • Peas - 1/4 cup

  • Onion - 2

  • Tomato - 1

  • Green chili - 3

  • Ginger-garlic paste - 2 tsp

  • Coriander leaves - handful

  • Cinnamon - 1 inch

  • Cloves - 2

  • Cardamom - 2

  • Dried mase - 1

  • Poppy seeds - 1 tsp

  • Turmeric - 1 tsp

  • Salt - as per taste

Instructions:

  1. In a mixer jar, add onions, tomato, green chili, ginger-garlic paste, coriander leaves, cinnamon, cloves, cardamom, dried maze and poopy seeds. Grind to smooth paste

  2. Cut the potatoes, add the grinded masala paste too it and marinate for 1 hour

  3. In a pressure cooker, add mustard oil, then add chopped onions, sauté well

  4. Then add marinated potatoes to it and mix, add carrots, peas and sauté everything well

  5. Now add turmeric powder, salt and mix

  6. Add washed 1 cup rice to it and mix

  7. Add 2 cups of water to it and mix, cover and cook for 2 whistle

  8. Once pressure is down, mix and serve hot
