Alur Dom from Indian State West Bengal

Dum aloo or aloor dum or aloo dum is a potato-based curry dish. Dum means slow-cooked, and aloo is potato. It is a part of the traditional Kashmiri Pandit cuisine, from the Kashmir Valley, in the Indian state of Jammu and Kashmir. Dum aloo is cooked widely in India and Pakistan. There are also Banarasi and Bengali variations.

Ingredients: 

  • Baby potato - 1/4 kg

  • Onion - 1

  • Tomato - 1

  • Green chili - 2

  • Ginger-garlic paste - 1 tsp

  • Cumin seeds - 1 tsp

  • Dried red chili - 2

  • Bay leaf - 1

  • Chili powder - 1 tsp

  • Coriander seed powder - 1 tsp

  • Turmeric powder - 1/4

  • Salt - as per taste

  • Oil - 3 tsp

Instructions:

  1. Wash and boil baby potatoes for 3 whistles, peel the skin and keep

  2. In a pan add oil, cumin seeds, dried red chili and bay leaf, allow them to crackle

  3. Add onion, sauté until soft , then add ginger-garlic [paste to it sauté until aromatic

  4. Now add tomato to it and sauté until it soft and mushy

  5. Add chili powder, coriander powder, turmeric powder and salt as per taste, and sauté all until aromatic

  6. Then add boiled baby potatoes to it and mix, add required water to it, then green chili and boil for 5 minutes

  7. Serve hot
