Thukpa

Arunachal Pradesh is one of the states in the north east India. This state shares a border with Assam and Nagaland, and an international border with Bhutan, China and Myanmar. The food of the state is influenced by the tribes in the region. The staple food is rice, fish, meats and green vegetables. Thukpa, a noodle soup prepared with vegetables and/or meats is a very common soup among the Monpa tribe. Momos are another food that is very common here. Another popular food from this region is boiled rice cakes wrapped in leaves.


Thukpa can be prepared in both vegetarian and non-vegetarian variations; the most popular non-vegetarian variation includes chicken.


It is a noodle soup dish that is made with boiled rice noodles, chicken or vegetables. It is a traditional dish of ‘Monpa’, a tribe of Arunachal Pradesh.

Thukpa has been described as a "generic Tibetan word for any soup or stew combined with noodles".

Ingredients:

  • Wheat Noodles - 1 bunch

  • Chicken without bone - 1/4 cup

  • Carrot- 1

  • Beans - 2

  • Cabbage - half

  • Onion - 1

  • Tomato -1

  • Ginger- less than inch

  • Garlic - 2

  • Chili powder - 1 tsp

  • Turmeric powder - 1/4 tsp

  • Pepper powder - 1 tsp

  • Salt - as per taste

  • Soya sauce - 1 tsp

  • Lemon juice - 1 tsp

  • Honey -1/2 tsp

  • Water - 1 cup

  • Sesame oil - 2 tsp

Instructions:

  1. In pan add sesame oil, add sliced onions into it and sauté it well

  2. Add chopped ginger-garlic to it and saute it

  3. Add washed chicken into it and mix well

  4. Add chopped tomato, carrots, beans, cabbage and saute it

  5. Add turmeric, chili and pepper powder, with salt as per taste and mix it

  6. Pour 1 cup of water and boil well until vegetables are cooked

  7. Now put wheat noodles into it and immerse in it

  8. Cook the noodles well in soup

  9. Finally add soya sauce, lemon juice

  10. Off the flame and add honey to it and mix well

  11. Serve hot!
