'Chainsoo’ is a flavorful and protein-rich Pahari dish originating from the hill regions of India, particularly Uttarakhand and Himachal Pradesh. It’s a lentil-based curry that showcases the resourcefulness of Pahari cuisine using locally available ingredients.

Black Urad Dal - 1/4 cup
Red chili - 2
Garlic - 4
Coriander seed powder - 1 tsp
Turmeric powder - 1/4
Salt - as per taste
Oil - 3 tsp
Dry roast, black urad dal, once cool down, grind to coarse powder and keep aside
In a pan, add oil, once heated add chopped garlic and red chili, sauté until aromatic
Then add coriander seeds powder and salt as per taste
Now add coarse black urad dal powder and sauté them well
Add required water and boil for 2 minutes
