Dalma from Indian State Odisha

Dalma is one of the most comfort and staple food of Odiya people. 

Dalma recipe may sound like Sambar but don’t get confused. Dalma does not contain tamarind and is thick in consistency compared to sambhar.


With the combination of lentils and vegetables, the Odia Dalma recipe is undoubtedly packed with proteins, vitamins, and minerals making it a very healthy dish.


As per archeological records, Dalma was invented by the Savaras tribe in Odisha. They used to add locally grown vegetables and pulses like – brinjal, papaya, elephant foot yam, pumpkin, chana dal, etc to prepare the dish. They used to offer this dish to Lord Jagannath. Later the dish was adopted by the king and become a part of the Chappan bhog of Puri Jagannath temple.


panch phoron consists of fenugreek seed, nigella seed, cumin seed, black mustard seed and fennel seed in equal parts.

Ingredients: 

  • Panch Phoron - 1 tsp

  • Dried red chili -2

  • Toor dal - 3 tsp

  • Chana dal - 3 tsp

  • Moong dal - 3 tsp

  • Carrot - 1/2

  • Beans - 3

  • Potato - 1

  • Raw banana -1/2

  • Radish - 1/2

  • Onion - 1

  • Tomato - 1

  • Green chili - 2

  • Ginger paste - 1/4 tsp

  • Chili powder - 1 tsp

  • Turmeric powder - 1/4 tsp

  • Salt - as per taste

  • Oil - 2 tsp

Instructions:

  1. Dry roast the spices given in the dalma powder ingredients, once cooled grind into fine powder and keep aside

  2. Dry roast toor dal, chana dal and moong dal until slightly brown, then wash it

  3. Now add all the vegetables to it with required water and cook for 4 whistles

  4. By then add oil in other pan, add panch phoron and dried red chili, allow them to crackle

  5. Then add chopped onion and tomato, saute it well

  6. Add chili poeder, turmeric powder and salt as per taste and saute it well until aromatic

  7. Add this to the cooked dal and vegetables and mix it

  8. Now add dalma powder and chopped coriander leaves and boil for 2 minutes and serve
