Madra from Indian state - Himachal Pradesh

Madra is a curd and legume based curry from the himachali cuisine.


Madra is one of the dishes that is served in a himachali food feast along with various other dishes. In himachali language, this himachali food festival is called as Dham.

Ingredients:

  • Rajma - 1 cup

  • Cinnamon - 1/2 inch

  • Cloves - 2

  • Black cardamom - 1

  • Cardamom -1

  • Star anise -1

  • Pepper - 1 tsp

  • cumin seeds - 1 tsp

  • Bay leaf - 1

  • Curd - 1 cup

  • Coconut pieces - 3 to 4

  • Dry grapes - 4

  • Green chili paste - 1 tsp

  • Ginger-garlic paste - 1 tsp

  • Chili powder - 1 tsp

  • Cumin powder - 1 tsp

  • Coriander powder - 1 tsp

  • Salt as per taste

  • Oil - 2 tsp

Instructions:

  1. Wash and soak rajma over night, then cook for 5 whistle

  2. Crush cinnamon and black cardamom and keep aside

  3. In a pan add oil, bay leaves and all spices with crushed spice and sauté it well

  4. Then add coconut, dry grapes and fry, then add curd and mix well

  5. Now add chili powder, coriander powder, cumin powder, salt as per taste and mix

  6. Then add green chili paste, ginger-garlic paste and sauté until aromatic

  7. Finaly add cooked rajma with required water and boil fot 10 minutes

  8. Serve hot with rice and chapati
