Madra is a curd and legume based curry from the himachali cuisine.
Madra is one of the dishes that is served in a himachali food feast along with various other dishes. In himachali language, this himachali food festival is called as Dham.
LETS GET COOKING:
Madra from Indian state - Himachal Pradesh

Ingredients:
Rajma - 1 cup
Cinnamon - 1/2 inch
Cloves - 2
Black cardamom - 1
Cardamom -1
Star anise -1
Pepper - 1 tsp
cumin seeds - 1 tsp
Bay leaf - 1
Curd - 1 cup
Coconut pieces - 3 to 4
Dry grapes - 4
Green chili paste - 1 tsp
Ginger-garlic paste - 1 tsp
Chili powder - 1 tsp
Cumin powder - 1 tsp
Coriander powder - 1 tsp
Salt as per taste
Oil - 2 tsp
Instructions:
Wash and soak rajma over night, then cook for 5 whistle
Crush cinnamon and black cardamom and keep aside
In a pan add oil, bay leaves and all spices with crushed spice and sauté it well
Then add coconut, dry grapes and fry, then add curd and mix well
Now add chili powder, coriander powder, cumin powder, salt as per taste and mix
Then add green chili paste, ginger-garlic paste and sauté until aromatic
Finaly add cooked rajma with required water and boil fot 10 minutes
Serve hot with rice and chapati
