Meethi Gaajar is simple side dish which is done with methi(fenugreek leaves) and Gaajar(carrots).
Best combo with rice and chapathi.

Carrots - 3
Fenugreek leaves - 1 bunch
Cumin seeds - tsp
Onion - 1
Green chili - 3
Pepper powder - 1 tsp
Turmeric powder - 1/4 tsp
Salt - ass per taste
Oil - 2 tsp
In a pan, add oil, once heated, add cumin seeds, allow it to crackle
Then add chopped onion, green chili, sauté both until soft
Then add chopped carrots to it and sauté it well
Add pepper, turmeric powder & salt as per taste
Add water & cover & cook until carrots are cooked completely
Finally add cleaned & washed fenugreek leaves to it
Sauté & cook for other 5 minutes
Serve hot with rice or chapathi
