Banana leaves are used to wrap marinated fish or meat, for grilling or sticky (glutinous) rice for boiling; similar to cooking “en papilotte”. Often banana leaves are also used as a lining of bamboo or wooden platters or plates for food to be served on it.
Why do we use banana leaves?
The leaves have a wide range of applications because they are large, flexible, waterproof and decorative. They are used for cooking, wrapping, and food-serving in a wide range of cuisines in tropical and subtropical areas.

FEW TIPS AND TRICKS.
Always add lemon juice or vinegar when you make fish fry since it adds nice taste and eliminates the fishy odor.
Marinate fish pieces in the masala for minimum 30 mins. Longer you marinate the deeper flavor.
Fry fish pieces in coconut oil for maximum flavor.
Go heavy on the curry leaves. it adds so much flavor.
HOW TO GET RID OF FISH SMELL FROM FISH?
1)Mix salt and turmeric in fish and leave to marinate for 10 mins. Rinse it well.
2)Apply vinegar or lemon juice over fish and wash it well.
3)Apply, salt, turmeric, lemon juice over fish and marinate for 10 mins. Now wash it well.
4)Soak it in milk: Casein, a protein found in milk, will bind to the fish and leave the fish smelling fresh as ever.
5)Mixture Of Corn Starch, Salt And Powdered Turmeric. Apply this over fish and wash it well.
6)Plain salt water can get rid of the fish smell.

Cutla Fish - 4 pieces
Banana leaves - 1
Mint paste - 3 tsp
Coriander paste - 3 tsp
Green chilli paste - 4 tsp
Ginger-garlic paste - 3 tsp
Turmeric paste -1 tsp
Lemon juice - 2 tsp
Salt - as per taste
Groundnut oil - 3 tsp
Wash the Cutla fish well. I have taken four pieces
In a bowl add, mint, coriander, green chili, ginger-garlic , turmeric paste and mix.
To the paste, add lemon juice and salt as per taste and mix well.
Now coat this masala on cutla fish, both sides and marinate them for 20 minutes.
Take banana leaf, wash them and slightly show the leave on hot tawa so the leaf becomes soft, this makes the leaf to fold easy.
On the heated leaf, keep marinated fish, apply groundnut oil on top.
Cover the leaf and tie them with thread.
Add oil on hot tawa and place the banana leaf wrapped fish on it.
Cover and cook on both sides.
Serve hot!! by removing the leaf.
Grinding the masalas all is been done with amikkal(hand grinder), you can used the powder, to make your dish faster.
