Orange and Lemon Extract

Orange and Lemon Extracts are highly concentrated flavors extracted from oranges and lemon onto an alcohol base. The industry minimum is 33% alcohol for all extracts, which is burned off in the cooking or baking process, leaving a rich flavors behind.
Extracts are used predominantly to flavor baked goods and beverages. They do not contain any substantial health benefits.
Do I Have To Use Alcohol To Make Extracts?
Yes, most extracts contain alcohol but you can use an alternative method in the recipe by using glycerine and water.
How Long Will Flavor Extracts Last?
Indefinitely. Store them in labeled jars and keep them away from heat and out of direct sunlight.
Homemade Extract Taste And Consistency
When you first make your Homemade Extracts they will look like water, with no color and clear.
After 5 weeks or so they will change color, develop a much stronger flavor, and they will be ready to use in your baking.
Where can I use
This extract is used to flavour marinades, butter, chutney, syrup and sauces as well as to add a lovely flavour to vegetable dishes.
Though this recipe only uses two ingredients, and is low maintenance to make, it does take about 6 weeks until it is ready to use as the vodka needs time to pull the orange zest out of the peels, making the lovely orange extract that is used in baking or cooking.
Once the Drink is over you can refill again and use.

How To Make Vanilla Extract (Homemade Vanilla)

Choose a middle range of vodka quality for this recipe, it does not need to be high or low quality of vodka.
Always grate only the skin of any citrus fruits since they have oil contain, do not grate till their white skin appear, they give you bitter taste.
Sterilize the bottle in which you want to store the extract.

Ingredients:
Vodka - as per bottle size
Orange peel or zest
Lemon peel or zest
Instructions:
Grate or peel the orange and lemon skin separately.
Add the skin to the different bottles.
Pour the vodka into it and mix.
Store them in dry place and keep shaking them everyday, after few weeks , the colour will be changed.
Enjoy the smell!
